Chilaquiles Recipe

Mexican Chilaquiles

Ingredients:

(Chile Guajillo Sauce)
-4 oz. dried chile guajillo
-1 tsp. cumin
-2 tsp. salt
-2 garlic cloves
-1 tsp. oregano

(Main Recipe)
-Corn Tortilla
-Mexican Crema (or sour cream)
-Shredded Mexican Cheeses
-Shredded Chicken
-Diced white onion


-Rinse off 4 oz. of chile guajillo.
-Remove stems from them
-Boil pot of water and then turn off and soak the chile guajillo for about 5 minutes.
-Remove chile guajillo and place in a blender with about 1/2 cup of water, 1 tsp. cumin, 1 tsp. salt and 2 garlic cloves.
-Once well blended, pour sauce into a strainer over a large pot. Using a spoon, push through the good liquid sauce, leaving the seeds and skin in the strainer.
-Place thicker paste left in the strainer back into the blender and add about a cup of water and blend again.
-Spoon through the strainer one last time and then get rid of the skin and seeds left in the strainer.
-Add two cups of water to the good sauce in the pot. Also add 1 tsp. salt and 1 tsp. oregano. Boil and then remove from the oven.

Now for preparing the main recipe:
-You can use some day old tortillas that have been sitting out and are crunchy and breakable. Or you can place them in the microwave for about 30seconds or even fry them. The key is that you want to be able to break them apart. (If you fry them it is easier to cut them before frying)
-Add 1 cup of water and 1 cup of Chile Guajillo sauce (prepared above) into a large pan. Mix well and bring to a boil (apprx. 3-5 min).
-Lower the heat and add the tortilla pieces made in step one.
-Add shredded chicken (you can boil and hand shred prior to preparing the main recipe)
-Add Mexican Crema in spoon fulls around the top of the items in the pan. (you can also use regular sour cream or for a lower fat recipe you can use plan yogurt)
-Sprinkle a mix of shredded Mexican cheeses around the top of it all.
-Sprinkle a handful of diced white onions around the top (more or less to flavor)
-Cover and let cook for about 3-5 minutes, or until cheese is melted.

Scoop out of pan and serve.
